STORY OF MUSHROOM

Today I want to talk about Mushroom.
Mushrooms are fungi, commonly placed in the vegetable category for dietary recommendations, but actually mushroom not a vegetable based on their cellular organization and composition. So maybe people need to re-evaluate food groupings and health benefits in the context of three separate food kingdoms: Plants/ botany, animal/ zoology and fungi/ mycology.
Anyway rather than talking about mushroom's history, I want to talk bout it's Nutrients:

  • Mushroom are good source of B vitamins, such as niacin, riboflavin and panthothenic acid, which help to provide energy by breaking down proteins, fats, and carbohydrates, B vitamins also play an important role in the nervous system.
  • Mushrooms are also a source of important minerals; Selenium that works as an antioxidant to protect body cells from damage that might lead to heart disease, some cancers and other disease. It is also has been found to be important for the immune system and fertile in men, beside Selenium, mushroom also contain Copper to helps make red blood cells, which carry oxygen throughout the body. Copper also helps keep bones and nerves healthy. Potassium is an important mineral many people dont get enough of it. It aids in the maintainance of normal fluids and mineral balance, which helps control blood pressure. 
  • Beta-glucans, found in numerous mushroom species, have shown marked immunity stimulating effect, contribute to resistance against allergies and may also participate in physiological processes related to the metabolism of fats and sugar in the human body
  • Mushroom are low in calories, fat free, cholesterol free and very low in sodium. Like all fruits and vegetables, mushroom are naturally gluten free.
And now i will give you how to cook a very nice mushroom, I called it as STIR FRIED MUSHROOM with BABY POKCHOY

Ingredients :

  • 1 tablespoon margarine
  • 3 gloves garlics, minced
  • 3 shallots
  • 1 onion, dinced
  • 4 pokchoys or chinnese cabbage
  • 3 chillies
  • 100 gr shrimps, peeled and deveined, add 2 sliced lime 
  • 1 tomato, sliced
  • Salt and pepper
  • Corriander leaves for garnish
Direction :

  1. Cook pokchoy or chinnese cabbage in a boilled water for around 1 min in small heat, then drain it n put in a plate 
  2. Put one spoon of margarin in a pan with normal heat. cook the garlics until browned,  Add the onion, shallots and chillies. Add the mushrooms to the mixture and cook until slightly softened, about 2 minutes. add shrimps and cook untill shrimps begin to turn pink. Pour the fish sauce, tomato chives, salt and pepper into the mixture and stir.
  3. Serve and garnish it with corriander leaves
